yacon
is a large plant in the same family as jerusalem artichokes, and daisies believe it or not, though even more useful. It will grow in any good soil doing even better with plenty of organic matter and sunshine, and maybe some support if your site is on the windy side as these plants can get quite tall through the summer.
They produce two types of tubers, the smaller ones with bubs you can save to pot up and plant the next season, and large storage tubers, which with a crunchy succulent texture are good to eat either raw or cooked.
